BOTTARGA! Ricetta/Recipe ::. Prendere dal pescivendolo di fiducia un cefalo fresco e sperare che ci siano le uova dentro 😜 (lo puoi fare con qualsiasi pesce, ma il sapore sarà meno deciso). Levare le uova dal pesce, spremere dalle vene il sangue e farlo uscire. Lavare le uova sotto l’acqua fredda e asciugarle con un pezzo di carta assorbente. Prendere un contenitore, metterci del sale fino, adagiare le uova sopra e coprirle con il sale. Lasciare la bottarga sotto sale 1 ora per ogni 100 gr di peso, estrarre la bottarga dal sale (che sarà molto umido), sciacquarla delicatamente sotto acqua tiepida e asciugarla con la carta. Stenderla su una griglia e lasciarla per alcuni giorni all’aria, fino a che entrambi i lati saranno secchi (girarla varie volte nel corso dei giorni). Coprire e lasciare 10 min. Mettere in planetaria le farine e lo zucchero. Quando il lievito è pronto, metterlo nella planetaria, mischiare l’uovo e il latte e versare a filo. Far sviluppare la maglia glutinica. Mettere il sale nel burro e aggiungerlo piano nell’impasto. Far lievitare fino al suo raddoppio, stendere sul tavolo di lavoro, aspettare un paio di minuti e poi tagliare le ciambelle con i due coppapasta. Mettere le ciambelle su un pezzo di carta forno e coprire e far lievitare 45 min/1 ora. Porta l’olio di semi a 180 gradi e friggi li ciambelle, scolale su carta assorbente e panale nello zucchero. Basta cuocere le verdure in acqua bollente salata, scolarle e se a foglia, strizzarle. Frullare e stendere finissimo la purea su un foglio di carta forno e cuocere nel forno tutta la notte a 70 gradi. Il giorno dopo, tirare fuori dal forno la carta forno e lasciar freddare il croccante di verdure. Prendere un frullatore per caffè e frullare il croccante di verdura per trasformarla in polvere! RECIPE!!! ::. Per fare il caviale di peperone: fai centrifuga del peperone, metti in un pentolino 50 gr di succo di peperone con 1 gr di agar agar e mischia. Porta a bollore e cuoci per un minuto poi aggiungi altri 50 gr di succo di peperone. Metti in una pipetta e versa le gocce nell’olio di semi congelato (messo precedentemente in freezer per almeno 3 ore). Scola il caviale e sciacqua sotto l’acqua fredda.
