::. Battuta di spigola, dressing al limone, semi di lino, feta, fiori di lantana & cetriolo.
DRESSING LIMONE:
90 gr mostarda dijon
2 gr xantana
100 gr succo limone
310 gr olio extravergine d’oliva
Pz sale
60 gr ghiaccio
Metti mostarda, xantana in un recipiente, incomincia a frullare e poi versa a filo limone e olio.
Una volta montato, aggiungi il ghiaccio e continua a frullare. .::
::. Sea bass tartare, lemon dressing, linseed, feta, lantana flowers & cucumber.
LEMON DRESSING:
90 gr dijon mustard
2 gr xanthan gum
100 gr lemon juice
310 g extra virgin olive oil
Pcs salt
60 gr ice
Put mustard, xanthan in a container, start blending and then pour lemon and oil slowly.
Once whipped, add the ice and continue blending. .::

[recipe] Fuchsia octopus!
What you’ll need:
• octopus already cooked
• 500 gr water
• 1/2 🍋
• 800 gr red cabbage
Method:
Cut the red cabbage and put it in a blender, add water and lemon juice and blend.
Drain the liquid with a sieve and dip the octopus (already cooked) in it and leave it to marinate for 4 hours in the fridge.

Svolgimento:
Taglia il cavolo rosso e mettilo in un frullatore, aggiungi acqua e succo di limone e frulli.
Scola il liquido con un passino e immergici il polpo (già cotto) e lascialo marinare 4 ore in frigo.

Frullare 50 gr di prezzemolo (strizzato) con 200 gr di olio di semi.

SUPPLÌ BROAD BEANS & PECORINO
INGREDIENTS: (for 15 ea supplì)
100 gr Carnaroli rice
30 gr broad beans pilled
60 gr grated pecorino
15 gr olio
300 gr vegetable stock
1 ea yolk
Flour
Breadcrumb
Eggs
INSTRUCTIONS:
1. Toast the rice in a pan with oil, add vegetable broth and cook for 13-15 minutes
2. Add a part of pecorino, broad beans, oil and mantecate
3. Spread on a baking tray and let cool
4. Add the yolk and the remaining pecorino, mix and mold the supplì
5. Take them and pass them in order in the flour, eggs and breadcrumbs twice
6. Fry at 200 degrees until golden and crunchy
7. Drain them on absorbent paper, add salt and enjoy them!

::. Prendere dal pescivendolo di fiducia un cefalo fresco e sperare che ci siano le uova dentro 😜 (lo puoi fare con qualsiasi pesce, ma il sapore sarà meno deciso).
Levare le uova dal pesce, spremere dalle vene il sangue e farlo uscire. Lavare le uova sotto l’acqua fredda e asciugarle con un pezzo di carta assorbente.
Prendere un contenitore, metterci del sale fino, adagiare le uova sopra e coprirle con il sale.
Lasciare la bottarga sotto sale 1 ora per ogni 100 gr di peso, estrarre la bottarga dal sale (che sarà molto umido), sciacquarla delicatamente sotto acqua tiepida e asciugarla con la carta.
Stenderla su una griglia e lasciarla per alcuni giorni all’aria, fino a che entrambi i lati saranno secchi (girarla varie volte nel corso dei giorni). Appendi la bottarga e lasciala in un posto ventilato e secco.
Per capire quando la bottarga è pronta, deve aver perso il 50% del suo peso iniziale.
Ricordarsi di tagliarla e grattuggiarla solo al momento dell’utilizzo.
La puoi conservare in una busta gelo o sottovuoto, in frigo per alcuni giorni o direttamente in congelatore.
Noi l’abbiamo lasciata sotto sale per giorni per tirarla fuori come un fossile per giocare con il nostro bambino (non Mattia, che si è divertito uguale, ma nostro figlio Romeo) .::

RICETTA:
50 gr farina integrale
200 gr farina 1
40 gr burro
40 gr zucchero di canna
4 gr sale
1 uovo medio
1.25 gr lievito birra secco
90 gr latte di riso
Mettere il lievito in una tazzina e metterci un pizzico di zucchero, scaldare 10 gr di latte e sciogliere il lievito. Coprire e lasciare 10 min.
Mettere in planetaria le farine e lo zucchero.
Quando il lievito è pronto, metterlo nella planetaria, mischiare l’uovo e il latte e versare a filo.
Far sviluppare la maglia glutinica.
Mettere il sale nel burro e aggiungerlo piano nell’impasto. Far lievitare fino al suo raddoppio, stendere sul tavolo di lavoro, aspettare un paio di minuti e poi tagliare le ciambelle con i due coppapasta.
Mettere le ciambelle su un pezzo di carta forno e coprire e far lievitare 45 min/1 ora.
Porta l’olio di semi a 180 gradi e friggi li ciambelle, scolale su carta assorbente e panale nello zucchero.
Noi le abbiamo fatte con 0.7 di lievito di birra fresco e 24 ore di lievitazione!

SEMPLICISSIMO! Basta cuocere le verdure in acqua bollente salata, scolarle e se a foglia, strizzarle.
Frullare e stendere finissimo la purea su un foglio di carta forno e cuocere nel forno tutta la notte a 70 gradi.
Il giorno dopo, tirare fuori dal forno la carta forno e lasciar freddare il croccante di verdure.

::. Per fare il caviale di peperone: fai centrifuga del peperone, metti in un pentolino 50 gr di succo di peperone con 1 gr di agar agar e mischia. Porta a bollore e cuoci per un minuto poi aggiungi altri 50 gr di succo di peperone. Metti in una pipetta e versa le gocce nell’olio di semi congelato (messo precedentemente in freezer per almeno 3 ore). Scola il caviale e sciacqua sotto l’acqua fredda.
