The story of two Chefs who combine their passion

for the kitchen and make it a family.


Chef Mattia Maria Rossi takes his first steps in catering in the Ostia area (from which he originally comes) and Fiumicino, working closely with young and motivated Chefs such as Marco Claroni, of the Osteria dell'Orologio, where he is lucky enough to learn the processing of countless fish dishes or the Peccato originale, where he deepens the bread-making.


It so happens that, driven to learn new techniques and improve day by day, he arrives to work in a restaurant in the heart of Rome, Settembrini, and this is where the magic begins.

From Settembrini, Mattia meets Flavia Beniamini, Pastry Chef of the restaurant, already with an experience at Duke's, from La Rosetta but above all at the court of Heinz Beck at the Pergola, the maximum expression of the Roman starred cuisine.

Between the two, the spark dictated by the common passion for the culinary world, immediately springs: the days pass quickly between a few furtive glances in front of the stove and the endless nights spent talking about their passion and dreaming of travel together to broaden their horizons.

As in any story, the two soon arrive at a crossroads that places them in front of a choice, which will forever mark their relationship: Flavia feels the need to get out of the Italian schemes to go and explore new cultures and lifestyles, and Mattia decides to embark on this new adventure with her, transforming into reality what until a few months before were only fantasies.

In their Australian adventure, they also decide to become co-owner of the Sotto Sopra restaurant with Chef Alessandro Pavoni. The restaurant, after just a few months, was awarded 1 hat, one of the major Australian awards from the Good Food Guide. Furthermore, Sotto Sopra is selected as an Italian restaurant, with a menu revisited in a modern key, to participate, for five episodes, in the successful Australian television program Chef's Line.


At the end of this adventure, Mattia's collaboration with the Australian company of home chefs At your table begins, thus laying the foundations for the creation of the FLAVOROSSI project.


Almost 10 years after their meeting, the issue of their Australian passport and the birth of their little Romeo Maria, the two chefs have returned to Rome to share their rich culinary and emotional baggage with you.
